If you had a lot of coolant in the oil from before the repair it could just be left over. The last one I did took a couple oil changes before I got rid of the white residue on the oil filler cap bottom.
If you just replaced the gasket, it is possible that the head was cracked internally. I've had them crack around the exhaust valves, but it could crack someplace inside and let water into the oil.
The other possible answers would be stuff like the head is warped, the gasket was damaged during install, or the block is cracked.
If you can get your hands on a cooling system pressure tester, that would tell you for sure if you are leaking water or if it is just left over from before.
