I thought I remembered you saying something about the harness being chewed up.
Honestly, I understand that you're anxious to hear it run, but you'd probably be better off wiring it with the new harness first. Once you've done that, the mechanicals can be addressed. You may cause more problems by trying to jerry-rig it just to hear it run. If there are shorts (which is pretty much a sure thing due to the mice), you might get it running only to find your dashboard wiring on fire, or your headlight wiring melted, or worse...

Aside from the electrical items in this link, you'll need to provide fuel to the carb. You can either wire in the fuel pump, or use an auxiliary gravity fed tank. For it to stay running, you'll need a good alternator also.
Please be careful, electrics can arc, and gas vapor likes to burn. If you use a fuel source in the engine compartment to feed the carb (like a boat gas tank) make sure it's not sitting on something that will move when the engine is running. Also make sure it's not touching anything that might arc if it's a metal tank.
You can probably make it run, but it might be better to wait until you know it won't catch fire...
