Would a windshield rubber, back window rubber and driver/passenger side rubbers from a 1981 Luv fit in a 1979 Luv? Thanks!

I don't think so, 81 was the first year of the "new" style body. Just to be sure, let 800 or someone that know's for sure to confirm.

I'm pretty sure the windshield and rear window would not work. They might be the same profile or not, but the window shape/size is different.

The door weatherstripping might actually work, I think it is the same profile. I know that first generation Isuzu trooper weathstripping fits, so I imagine the 81-87 pickup stuff is the same. The door is different shaped, but should be larger than an 72-80 door. Just start at the sharp corner at the top of the window and work around to the bottom of the door. Then cut off whatever excess there is where the two ends meet.
