I had to drive 20 miles down the highway and noticed that my temp gauge was up 3/4 of the way.

I have replaced the thermostat and water pump, but it still is elevating past the 1/4 normal mark on the stock temperature gauge.

I replaced the radiator cap with one that has a temperature gauge.

Here are the readings from the cap-gauge compared to the in-dash dash. After letting it idle for some time in my driveways it seems to be topping out at 200. Is 200 running to hot or is my stock temperature sensor giving a false reading?

To me it looks like it's pointing at 160, 180, and 190. If you have a 180 thermostat in there, I'd say 190 isn't too far off.

I agree. If you want the stock gauge to read lower when at 180, maybe change the sending unit.
I have two trucks that both barely get off the cold mark. I plan to try changing the sending units to see if it that fixes it.

Under normal driving conditions I would worry @ 200 or more.
I would be watching very closely at 200, and shut it down up around 210-220.

I would have the radiator boiled out. Try this- get it up to full temp, turn it off, then put your hand on the radiator, starting at the top. My guess is that the bottom part will be noticably cooler than the top, the bottom rad hose could even be cooler than the top. Any of these conditions is a symptom of a partially clogged radiator.
