I don't know why you couldn't do the same thing with a dropped spindle. The only advantage I know of to go five lug instead of six is that there are a lot more wheel choices from both Ford and Chevy depending which pattern you use. Rear axles in a Chevy Luv rear end hold up pretty well, it's the ring and pinion that come apart when you hook up with V8 power. If you are going to do a lot of racing you probably will need a nine inch Ford, or something equivilent. A lot of guys use an S-10 rear for street use and there is one in particular that will bolt right in, but I don't know which one. You can go early model S-10 with leaf springs or later S-10, S-10 Blazer, Bravado,ect. There are some really smart guys on this page with a lot of knowledge. So keep asking questions and you'll get the right answers.
