You're torturing me, first Gumbo and now BOUDAN!!!! I had relatives who made Boudan that I could eat myself into a coma over. I can't find it out here anywhere and in fact alot of folks out here in Great Falls don't know what it is. If you get a surplus HIT ME UP!! Good Boudan is well worth the price plus the FEDEX overnight shipping.

Had a great trip to Mytmouz yesterday. Sinshine and cool the entire trip. Got 19 miles per gallon on the way to his house and after picking up the V6 and strapping it in the bed, I got 23 miles per gallon and was able to hit 72 miles per hour (downhill) on the return trip. Can't wait to see how much better it gets with the engine INSTALLED! Glad I went yesterday though, today I woke up to light rain and it is supposed to get worse tonight....

40's around here. Snow's all gone, but at least we have a base for our snowpack in the highcountry.

RET1614...No such thing as a stupid question. Boudan is a sausage that was made to use ALL the pig when times were hard. Made by people who raised and slod pigs for market but couldn't really afford to keep one for themselves so they used what they could keep. It's made from the pork butt, liver, and a big array od "other ingredients" such as in todays world, a couple other cuts of meat, onions, garlic, peppers, several spices and a decent amount of rice. The rice as my Aunt told me was mainly just put in because it holds the flavors, it's cheap and would also make it stretch farther for a larger family. It was then stuffed into a good sized casing...maybe an 1 1/2 or so. Way back there were alot more parts of the pig that was ground up and put in it as well but now those parts go into hot dogs. :lol:

I'm sure I've only scratched the surface of it but that's it in a nutshell. If it's made right, that's all I need for a meal.

Now back to weather, windy, cold and suppose to snow, I'm heading out to chase a few Pheasants.

Raining today. I was going to put up some more Christmas stuff in the yard, well maybe tomorrow, if I don't sink into they ground up to my neck.

Boudan is one of those things you don't judge by anything be the taste... I don't want to know what in in a hot dog :P

wow is it raining here omg i went out to go to the store and saw that the rain gutters wer cloged so i went up on the roof to clear it and got soaked i was up there for lilke a min....

Rain all day Sunday (1"+) They said on the news last night that if we did not get another drop for the rest of the year, we would still end up way above normal for rain fall this year.
This been THE wettest fall I can remember in a long time. I am so sick of rain!

That actually sounds incredibly good. I really can't think of any food that's specific to CA... lol, we're just not cool enough.

Been raining all weekend, and I was told that there's almost 5 feet of snow in the highcountry. We're still gonna burn this summer, but as of now not as bad. 8)

Current temperature....-8, forecasted high for today....-2, I have to cook a pig today for our shop Christmas party. Getting ready to start....Even though I have learned to cook a pig in a huge "tow-behind the vehicle" charcoal Oven and it only takes about 6 hours I think the cold temp is definitely going to add time. Hopefully it gets done by the target time.

Are you cooking a whole hog? Something I have never done. I have seen some of those whole pig cookers.. Seen a few folks cook it like a chicken, split in two pieces. How you doing it... A few pictures would be great.

Yes it's a whole hog minus the head. There's a bunch of women working where I work and THEY didn't want the head on it. Said it would be gross. Coat all exposed meat with a mixture of Garlic salt, Onion salt and black pepper. Here is where it gets a little different from southern tradition.....I learned this way a while back, just split the pig down the spine with a Meat clever and a hammer. Split the vertebrae but don't cut through the Hide. Clamp it between two big metal racks and put in on the heat. Flip once about halfway through. (2 1/2 - 3 hours, depending on the size) Take it off, let it sit an hour while drinking really cold beer. Check it to see if it's cool enough to carve, drink another beer or two before starting to carve, carve an place it in serving pans and continue to check to make sure beer in various coolers is still cold. Eat, drink and be Merry.

Sorry I didn't think about taking pics...will next time. Never tried the apple and onion "thing". Makes perfect sense to me...I'll have to remember that next time. :esurprised I'd never disagree with a Texan over bar-b-q. You guys wrote the book on the subject.

When we killed a hog, you scrape it, not skin it. At least that is the old timey way I was taught. You heat water in a big cast iron pot till boiling, poor some of the water on the hog( it is already dead kiddies) wait a little bit and "scrape" the hair off the hide with a big knife, repeat as needed . You can use just about every thing but the squeal... And that my friends is what the old timers did. I won't get specif about it , but hog head cheese is just about what it sounds like. Blutwurst is another one. My kids know that meat does not just come in a nice sealed package in the store :lol: My in laws are Old Texas German. My wife is 2nd generation American.

Back on subject, no rain today but 50% chance tomorrow. I did get to hang most of the Christmas lights.
