The reason you have to baby the gas is cause' that if you give the motor too much gas at first then it's getting too much fuel and your kinda "flooding" your engine till it gets at the right speed so that the motor can combust all the fuel in the chamber.
To answer Farmer_joes comment, yes, my truck does it too, but then again I also have 120K+ miles on my motor and tranny, and I kinda rush my shifting a bit too, and i've got my clutch touching the floor when I shift. I need to find a re-build kit or get a low-milage 2wd diesel trooper trans and bolt it to my motor and make a new trans mount (it it needs one)
