Just realized mine has never been connected.

The only way is to remove the stock temp sender and install the probe there. You'll lose the use of stock temp gage this way.
Getting both the stock gage and the Sunpro gage to work would require a new fitting in the water jacket. It's not a good idea to try and "T" off the same fitting. Coolant needs to flow across the sensors to effectively give accurate readings. A "T" fitting of some kind would leave the sensors in a pocket of coolant.
The stock sender is near the thermostat so it is positioned to give the most accurate reading. Finding a place somewhere else on the motor will give lower temp reading.
You might consider removing the Sunpro temp gage and install another type of gage (volts, amps or oil press). Maybe swapping a gage with someone that could use a temp gage.
It looks like somebody ran into the same problem and elected to keep the stock system.

Will try to get the Sunpro working, as of now, the stock gauge isn't hooked up either.

Well, I spent an hour or so trying to figure out where te stock temp sender is... the Haynes manual is worthless by the way :D

Does anyone have a picture of where the sender connects to the engine, or which section of the wiring harness itends with?

Thanks

It is on the underside of the intake manifold, forward of the carb.
