I just finished replacing the clutch, pilot bearing, and throwout bearing on a 79 luv 4x4.
Got everything bolted back together and went to attach the clutch cable and it seems to have too much slack.
I've adjusted the adjustment nuts up by the firewall all the way out and it still does not begin to engage the clutch until about 3/4 of the travel on the clutch pedal.
I'm assuming that the clutch cable just needs to be replaced as it may be stretched out, but figured I'd post this here in the meantime to see if anyone has any insight into this matter.

The clutch legal bracket is known to bend and break. Is your pedal parallel to the brake pedal?

the pedal appears to be parallel to the brake pedal and does not have any left/right movement or any cracks in the bracket. I actually had that issue before on this truck and replaced that bracket and pedal.

I just swapped in a new clutch cable and it seems to engage the throwout bearing to the pressure plate a bit sooner in the pedals travel, but still does not want to shift into gear while the engine is running.

I think you meant "disengage", since you described pressing the pedal. It engages when you release the pedal. If I'm guessing wrong, disregard my suggestion below.

Check the firewall for cracks around where the clutch cable passes through it. Have someone press the clutch pedal repeatedly while you're watching the clutch cable and firewall. If the entire clutch cable moves when they press the clutch, your firewall is cracked and needs welding up.

Or the throwout bearing is in backwards. Or the pilot bearing isn't seated all the way into the crank....

As far as I can tell everything seems to be functioning. Could it be an issue of the new clutch plate seized onto the flywheel? The throwout bearing seems to be putting pressure on the fingers of the pressure plate, but it won't go into gear while running.

So it won't DISengage. I don't see any problem with the firewall, so that's not it.

so by disengage you are referring to the pressure plate being pushed in by the throwout bearing far enough for the clutch pad to come off the flywheel?

do you think that the pad is seized onto the flywheel somehow? Maybe that would explain why the pressure plate fingers are not further release when the pedal is not depressed.

I'm fairly positive. I remember the disc being labeled "flywheel side" and installing it correctly.

reminds me of the problem i had on my truck.Mine is a 78 and has a cable but mine would do the same as yours wouldnt allow me to shift while driving. Honestly the way i fixed mine is the cable has two nuts right? Loosen them all the way back and i actually had one of the nuts not even on the threads anymore and only one is on the threads and that put eneough tension on the cable for the clutch to engage and disengage while driving. Hope that makes sense. That took care of my problem and no problem ever since.

Just thread them inwards to put more tension on the pedal hope this makes sense. easy fix i hope.It happened after i replaced my cable due to it snapping from being old.Only way i was able to make it work.

One nut on thread other just against the rubber.Fine tune to your liking after that.
