tr0jan - I'm not sure if you meant that your rims rub, or the tires. He didn't mention what size tire he's looking at. Also, he has an '82 (2nd generation), and I'm not quite sure if clearances are the same as your '75 (1st generation) LUV. I'm running 15x8 rims with no rubbing at all -- and I think my tires are 205-60 (not sure about the 205, but positive they're 60 series tires).
mojogoat - Sorry, I don't have a short answer to "would they work". But the size alone isn't a deal-breaker.
Here's a post of a P'up with 18" rims (same body as your LUV). So you will need to make sure the center bores will fit. Second, the backset/offset needs to work. Some do, some don't. And if the rims don't give you clearance issues, it still can depend on the tires. One thing I've noticed is that the rear tires have way more fender clearance than the front.
