I didn't take any pictures, but I grilled some catfish today. Blackened seasoning, creole seasoning, white pepper, cayenne pepper, and lemon pepper. (We like various ground peppers)

Good stuff.

As usual, my crappy pics do no justice. No special reason for the cook, I just had a weekend off and the urge... DId coincide nicely with some SEC Football, although one of my local teams lost a heartbreaker...

BBQ as punishment... Or technically grilling, lol...

My daughters boyfriend claims to be a pepper head. they were coming over today so I broke out the heat...
I made a paste up of Jalapeno pepper sauce and Oakridge BBq's Habanero Death Dust rub and bagged it to soak in the goodness...

Removed them from the bag and gave them a generous dusting of Oakridge BBQ's Crucible Ghost Pepper rub...

And grilled them indirect, melted some butter in some Habanero pepper sauce and did a sear on them to set the sauce...

Gives new meaning to the term 'meat sweats'...

Crappy pics, as usual...

I purchased a Snake River Farms Kurubota half ham earlier this month, and planned on it arriving last friday, which it did. Loaded up the UDS with some lump and a couple of pecan chunks, and put it on today, with a light dusting of rub. I placed a pan on the lower rack that had some pineapple slices, marischino cherries, and some turbino under the ham. The smoker carmelized that nicely, and the ham drippings infused it as well. I used the recommended glaze for the ham, peach/pomegranite, and it was awesome. I will be using it elsewhere...

And since I might as well, I spatchcocked a couple of birds. One is dusted with Plowboy's and the other with the Memphis BBQ company rub...
