When the timing mark on the crankshaft pulley is at 0 degrees, you have either #1 or #4 at TDC. Pull the distributor cap and see which one it is pointing at and you are set. You can also tell by which valves are open or closed, but I don't remember off the top of my head what they are supposed doing for #1 or #4 and I don't have my book handy.
I take baling wire and wire the chain to the camshaft gear before removing it. This keeps your valve timing dead on and you just have to line up the cam the same way as it came off when you reassemble. It is also a good idea to loosen the valve adjustments all the way before setting the head back down. That keeps the valves up out of the way so you don't hit a piston with one, or nick the gasket.
