Has anybody found a supplier for the stock ratio ring and pinion sets for the stuck back axle? Hoping maybe I could find one that carries the 3.42 ratio diff gears from the diesel. Thinking used ones are gonna be pretty tired by now. 4.10 is too low and I don't think 3.73 is going to be enough change

Used is probably your best option. New gears & the parts to install would probably be prohibitively expensive.
The 3.42 gears were also in certain gas-engine trucks. Around '84 there was one with the "MPG" label, it had the G200Z 1.9L engine, 4-speed tranny & 3.42 gears. This was prior to the gas 5sp trannies introduced in '86. The 1.9/4sp lasted through '87, don't know if they retained the same rear gears though.
'78-'80 automatic trucks had 3.73 gears, manuals had 4.10s, the same trend may have carried over into other years. A 2" taller tire & 3.73 gears will give nearly the same final drive ratio as 3.42 gears.
Don't forget the 3.92 Impulse gears, turbo models were LSD. You must add a thrust block to use in a drum brake axle though.

Just a thought... s10s and blazers had the 4.3 with an overdrive transmission and 3.73 gears for many many years. You don't hear too many owners complain that it's a poor combo.

Will scour the local picknpull yards for 80s iauzus and see what comes up
Aiming to significantly lower highway rpm and get my first gear to be usable. I start in second even on hills. 3.73 would help but I am aiming to drop rpm to 2000 rpm at 55 from 25-2600 now. Thinking 3.42 would help a lot more. I have 30" rear tires which are about equivalent to swapping to a 3.4-3.5 vs stock with my 4.10. Didn't do nearly enough for my goals. 4.3 autos have a 30% o/d I have something like 17%. Need to dig around and find the numbers again but I am hoping to find a much lower diff gear. Will probably have to swap axles. If I go with the diesel I want i need much lower for highway speed.
