Let's see:
No thermostat (which is not located under the radiator cap) means the water will flow continuously lowering the temperature slightly and yes the water will foam slightly with the radiator cap off. The radiator cap should be good to around 15 psi which raises the boiling point of the water.
After running for 10 minutes, the engine WILL be hot to the touch.
What it really needed to check what temperature the engine is at would be something other than an idiot light and/or use a laser thermometer on the engine. You should be loking at approximately 180 degrees. I'd go with a good guage!!

That is true about the head gasket. Check the oil to see if there is any water in it by having a whitish appearance. Also bring each piston to top dead center, attach an air fitting to that particular spark plug hole and using about 15 psi or so, you can listen for any leaks into the radiator. Of course the truck should be running rough and some smoke commimg out of the exhaust if the head gasket is blown. Anyone else with some quick ideas?

Without a thermostat to restrict the flow, the water may be running through the radiator too fast and not getting properly cooled.

Yes, too lean can make it run hot also.

Rondog is right. Running too lean will make her run hot. What might have to be done is to try rejetting the crab with larger jets or just rebuild the entire carb. Not getting any response/changes from the engine when adjusting the mixture means something is amiss. If you have another carb to try on it, I'd try it. I used to have an extra one when I drove a LUV around Las Vegas due to the problem of having the floats stick after about two months of driving in the summer heat. I would just swap carbs, and clean the one I pulled off and store it for next time. Used it to help troubleshoot other problems too.

Forgot one thing, check the timing. If the timing is too far out, it can adversly affect the temp and possibly the carb setting. I don't have a book to check what the setting is, maybe someone here has it handy for you.

Timing for 73 is 8 degrees BTDC at slow idle (700 rpm or less) with vacuum advance hose disconnected.
Also if the idle speed is more than 700 rpm the mixture screw will have no effect. It is an idle mixture adjustment only.

Looking down on the marks from above they are: the one on the right is 20 degrees BTDC, the middle one is 10 BTDC, and the left one is 0 BTDC. Ignition timing (8 degrees) is just a bit to the left of the 10 or middle one. Cam timing is set using the 0 mark.

No Thermostat can be a bad thing and sometimes have an adverse affect on temeperature climbing especially in vehicles with high miles. (more friction between berings) A thermostat restricts the water flow allowing the radiator and fan time to cool the coolant running through it. Without a thermostat the coolant might not have enough time in the radiator to cool down. Thermostats are pretty cheap, you might need to try a cooler running one to see if it helps. Ten minutes of running will make any engine to hot to touch...at least any of mine anyway. You said it is pushing coolant out past the radiator cap, you might need a new one to hold the right amount of pressure.

How old is your water pump? Is the circulation strong?

OUCH! Go with a small aftermarket radiator. Even an aluminum radiator is far cheaper that that. I'm going with one from SpeedWayMotors.com If I remember it is 19" tall by 22" wide. Part number is 917347 and is $110. There will be a bit of modification to the truck of course, but minor. This will even keep a V6 cool so if/when I swap engines out, I'm covered.

Check with your local auto parts store. LUV radiators are still available. Should be lass than $216.00.

I agree with chevyluv1980. Just find a radiator about the same dimensions with the hose necks close to the same spots and MAKE IT FIT. When my fan went through mine, a free radiator, some flat iron, angle iron and a handful of hardware did the trick for me.
