Was doing some tuning today and when I turn the A/C on and hit the throttle a bit, the engine races up to 3000 or so rpm's and stay there until I turn the A/C off.

What in the world?

Sounds like your idle speed control valve is not working properly. It will hold the idle up a little when you turn on the a\c to compensate for the drop in idle speed when the a\c is on.

That is it. It may pushing to far against it or it maybe to close and needs to be moved away from it so it won't bump the idle up so much.

You can take it off. The only thing is it will drop your idle some. The other problem is that it might run a bit hotter with the idle being lower. You can bump up the idle higher so when you turn on the a\c it will be around normal idle range if you can't fix it.
