So I noticed the LUV started to over heat after just driving it for a few minutes. There is plenty of water in the rad. Where do I go from here? 1980 4x4 1.8L 4spd

Have you checked the thermostat? That's the next thing I would look at.

Make sure the thermostat is not stuck closed. If thats not it the water pump could be bad. Sometimes the water pump can go bad and not show any signs of it. I had one that went bad but showed no signs that it was bad. It didn't wobble or make any noise.

Start it up, with the rad. cap off, and as it warms up, you should see the water start to circulate in the radiator. If not, then 1st remove the thermostat, and if the doesnt do it, then go to the water pump next. GOOD LUCK!!!!
