The dash can be found by doing a search for them ere. Just recently we had a few people order some out of AUS that are fantastic dash replacements.

The seats you have two solutions. Re-ulposter it or go to the boneyard and find the seats out of a LUV, Isuzu Trooper or Pup. They seem to work K.

Yeah it's called a V-8 swap !! no really these little 1.8's dont have much of anything as far as power, and very few performance mods you can do to them. just my two pennies.
Later,

Weber carb, offy intake and a header are the most common things to do.

Grimace, havent see too many posts from ya. =-) Can you really put an
offenhauser intake on a stock luv motor? They are cool intakes, we have one on a 53 Ford Flathead (Can't use it, though its for my Dads
29 Model A Hot Rod =P )

You can use an offy for the luv if you can find one. the last one that was on ebay went for a pretty good lump 'o cash.

Yup. They are hard to find, and pricey when you can find one. But worth it.
