So my Grandpa gave my daughter the 1980 Chevy Luv that I learned to drive on. We towed it from WA to CO and its in the garage. Now the fun part....It is in pretty good shape but defiantly needs some work. We are going to fix it up but not a full restore. The interior is shot. and it isn't running but the body is pretty straight with some rust. I haven't had a chance to read all the Newbie section but I am working on it. Any suggestions on where to start and source parts would be helpful.

I hope to get involved here and post some pics as we make progress.

Welcome. There's a ton of information here for sure.

If you're keeping it stock, some of the best upgrades are a Weber carburetor and an electronic ignition. There's an article on swapping the distributor out of an 82 LUV in the information section on the main page. http://www.luvtruck.com/pdf/LUVignitswap.pdf

If you're swapping motors, there's a ton of information available on that as well.

Its going to be pretty much stock for now. The main thing is getting it running and replacing the interior. The dash is pretty cracked up. It doesn't look like there are a lot of replacement dashes out there unless you buy one from Australia. We are trying to keep it at or under 5K if possible but we will see. My dad and I will do the body work and paint but weather stripping interior and bushings stuff like that is where I am going to nickle and dime.

Is this dash salvageable?

Unfortunately the dash mold in AUS was destroyed due to people whining to him about the price, this was 10 plus years ago. You can get a dash cap pretty cheap. Like what was said above I would add a Weber carb, the stock ones don’t rebuild real good and are problematic.

Looks like this is the one I am looking for. There are electric choke and manual choke. This one is electric

That’s the kit. Check at redlines website and see what the direst price is.

Welcome. There are plastic molded dash "caps" that are usually on E Bay. They look pretty good and cover the top half of the dash. Enjoy your project.
