Welcome back to the forum!

27x8.5r14 is probably as big you can go without lift or fender trimming. I just put 225/70r15 on my truck yesterday with no lift and it fits very well with enough clearance to not rub through suspension travel. That's the same as a 27.5x8.5r15.
You could probably do a 28x8.5r14 with shackles and tightening the torsion bars without clearance issues.

Biggest problem with our trucks are the small wheel wells which forces trimming the fenders or doing body lifts. I personally don't like body lifts but that's the only option if your not wanting to do Solid Axle Swap or hack up fenders.

Interco makes swampers in a 225/?r14 and 27x9.50R14 and 28x8.5r14. Beyond that your left with changing wheels or pizza cutter all terrains at best. I really wanted to keep stock wheels for appearance but finding aggressive tires was either non existent or expensive. I put 15 inch Isuzu trooper wheels and gained a lot more options for tires and picked up a nice set of used tires for $100.

A 27x8.5r14 is about 1/2 inch shorter than a 225/70r15 and 1/2 inch taller than a 225/70r14.

Always remember that each tire brand fluctuates +/- 1/2 inch from the next tire brand. Most brands will post the actual measured height on their website. Check out interco tire co website and you'll see what I mean.

Here's a really good tire size calculator. Play around with it and you will be able to convert tire sizes and compare to find the size you need.

If your willing to do a body lift I've heard that 30s will fit with without issues.
