Sounds like you will be busy for awhile. But also sounds like it will be alot of fun. Good luck with your builds.

What are your exact plans for your truck will dictate the proper way to build it.
If you are wanting to turbo the motor things are a whole lot different then if you want to go naturally aspirated. If it is a driver and to be a little different look at the 305 TPI (works with turbo as well) with a 700R4 which will give you the best of both as in great take off(3.06 first gear) and the overdrive with the lock up but this is just one little idea and it is your truck but i do like that you are looking for info to compile and then make a decision. As for the rear end that is up to your intended purpose of the truck.Just a clue i built a 82 S10 with a 305 stock other than a marine cam 700R4 and it averaged 32 mpg on the highway.More later if you want.

ok got the 305 today and the 700r4 but the toqure conv. is bad but im not planning o useing the 700r4 anyways i took off the intake on the 305 and put a eledlebrock preforemer and a junk carter afb 4bl to see what it would look like it looks like it belongs in a mikado luv =) next sat i should be getting a 350sbc ad a turb350trans which im gona marry to the 305 and all ill need to do next is get the mounts and a driveline and be good to go with a v8 curiser to putt around in and while im gona be doing that get the 350 built to pro-street hp levels so when i get my truck ready for the second change over ill have that part done
